Seeing bread and tomatoes together reminds me, I’ve been meaning to look for a recipe for panzanella salad ever since enjoying it in Italy last year. Do you have one?

My grandmother used to eat tomatoes sprinkled with sugar. It’s not bad. But my favorite way to eat tomatoes is in a sandwich. You could add things like lettuce, bacon, and onions, but they dilute the pure summer joy of home grown tomatoes.
My recipe for and easy tomato sandwich
2 pieces light brown bread, each lightly toasted on one side
Slices of a slicer or beefsteak type tomato (enough to make one layer of tomatoes on one slice of bread)
Mayonnaise
Salt and freshly ground black pepper
1. Spread mayonnaise (to taste) on toasted side of one slice of bread
2. Put tomatoes on toasted side of other slice of bread
3. Salt and pepper tomotoes to taste
4. Close sandwich, wrap in a paper towel (they get a little messy) and eat.
